Research and analysis of selected substances with high viscosity

Abstract

Do analiz wybrano olej przeznaczony do konsumpcji wraz z jego frakcjami produkcyjnymi oraz kosmetyki zawierające kolagen. W części teoretycznej opisano oleje roślinne oraz kolagen. Scharakteryzowano ich budowę i strukturę, właściwości fizykochemiczne i zastosowanie. Wprowadzono także pojęcie lepkości, krzywych płynięcia i lepkości, tiksotropii, opisano podstawowe parametry charakteryzujące lepkość. W ostatnim rozdziale przedstawiono problematykę analityczną próbek o wysokiej lepkości. Celem pracy była charakterystyka reologiczna kolagenowych preparatów kosmetycznych. Ponadto postawiono sobie za cel opracowanie bądź modyfikację procedur oznaczania metali ciężkich, kolagenu i białka ogólnego w omawianych materiałach. Na podstawie uzyskanych wyników stwierdzono, że preparaty kolagenowe wykazują charakter pseudoplastycznego płynu nienewtonowskiego z granicą płynięcia. Oznaczenie metali ciężkich wskazuje, że nie migrują one z surowca do produktu. Opracowano procedurę przygotowania próbek oleju do oznaczania metali ciężkich, Fe i Mn. Stwierdzono bezpieczne stężenie metali w produkcie finalnym oraz ich niekorzystny wpływ na jakość frakcji produkcyjnych w trakcie długotrwałego przechowywania. Oznaczono całkowite stężenie białka oraz samego kolagenu, co pozwala stwierdzić, że zastosowanie hialuronianu sodu oraz palmitynianu retinylu i octanu tokoferolu w hydratacji znacząco zmniejsza jej efektywność i w efekcie stężenie finalne białka. Stwierdzono także, że pomiar reometrii bezwzględnej jest obiecującym wskaźnikiem szybkiego sprawdzania denaturacji białka kolagenowego.
For the analysis of the rapeseed oil, together with its production fractions and cosmetics containing collagen. In the theoretical part the physochemical properties of edible oil and collagen, their structure and applications were described. Characterized their structure, properties and applications. It also introduces the concept of viscosity, flow curves, thixotropy, describes the basic parameters characterizing the viscosity and rheology modifiers. The last chapter presents the problem of analytical samples with high viscosity. The aim of the study was wide description of collagen rheology properties. In addition, set the target to develop or modify procedures for the determination of heavy metals, collagen and protein in these materials. On the basis of these results, it was found that collagen preparations exhibit pseudoplastic nature of non-Newtonian fluid flow. Determination of heavy metals indicates that they do not migrate from raw material to product. Sample preparation procedure has been developed for the determination of oil of heavy metals, Fe and Mn. It has been found safe metal concentration in the final product, and their adverse effects on the quality of the production fraction during long storage. The total protein concentration and collagen was determinated, which demonstrate that the use of sodium hyaluronate and retinyl palmitate and tocopherol acetate significantly reduces the hydration and consequently the efficiency of the final protein concentration. It was also found that the measurement of the absolute rheometry is promising for high-speed checking of collagen protein denaturation.
